
Wild Game & Domestic Meat Fresh Sausage Making
Irving’s custom fresh sausage making is unique - you actually get to choose the seasoning in your fresh sausage. How often have you had sausage made when you have had an animal processed, and discovered that you actually don’t like the sausage.
At Irvings Farm Fresh we give you a wide choice of seasoning, and depending on how much meat you would like made into sausage, we can make several different varieties - subject to a minimum quantity of 5Kgs per seasoning.
The meat supplied does NOT have to be government inspected. We would however prefer all meat to be supplied ready boned. Sausage can be made with any domestic or wild game meat.

Irvings Speciality Seasonings: Cumberland, Lincolnshire, Leek, Breakfast, Rosemary Garlic, Garlic, Sweet Chilli Zinger, Habanaro Chilli, Maple, Mild or Hot Italian, Honey Garlic, Sundried Tomato & Basil, Bratwurst.
Special Order Seasonings: These are premixes that have to be ordered in. Beef & Onion, Ukrainian Garlic, Moose Salami, Chorizo, Souvlaki, Cajun, Sweet Italian, Farmers Sausage, Polish Sausage, Beer Sausage.
Smoking and Curing: With our smokehouse now in full operation, we are now able to offer a range of cured / smoked sausages. Recipes include Regular Smokies, Garlic Sausage, Pepperoni, Beerstick.
