Apple Bacon Cake (gluten free)
1 pack Irvings Side Bacon or Bacon Ends
4 large Granny Smith apples
2 cups Water
2 tbsp Lemon Juice
3 cups All Purpose Flour (use Kinnikinnick Flour for GF)
3/4 cup Sugar
2 tsp Baking Powder
1/8 tsp Salt
1/4 tsp Ground Cloves
1/4 tsp Ground Nutmeg
5 oz Unsalted Butter
1 oz Bacon Fat
2 Eggs, whisked
3/4 cup Milk
2 tbsp Sugar
Dice and cook down bacon, reserve bacon fat.
Grease 9" Round Pan. Preheat oven to 375F.
Dice apples and soak in lemon water.
Sift Flour, sugar, baking powder, salt, spices together in a large bowl. Strain apples, toss and mix with dry ingredients.
Cut butter into dry mix until butter pcs are pea sized. Add bacon fat, eggs and milk. Mix until dry ingredients are just wet. Do not over mix.
Fill pan evenly with mix, top with bacon bits and 2 tbsp sugar.
Bake 40 - 45 minutes until cake tester comes out clean. If top browns too much then cover with foil to keep from burning.
Cool in pan for 10 minutes. Remove from pan and let it cool completely before slicing and serving.
