
Ingredients
- 1 pack Irvings Side Bacon or Bacon Ends
- 4 large Granny Smith apples
- 2 cups water
- 2 tbsp lemon juice
- 3 cups all purpose flour (use Kinnikinnick Flour for GF)
- 3/4 cup sugar
- 2 tsp baking powder
- 1/8 tsp salt
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 5 oz unsalted butter
- 1 oz bacon fat
- 2 eggs, whisked
- 3/4 cup milk
- 2 tbsp sugar (for topping)
Method
- Dice and cook down bacon, reserve bacon fat.
- Grease 9" Round Pan. Preheat oven to 375F.
- Dice apples and soak in lemon water.
- Sift flour, sugar, baking powder, salt, spices together in a large bowl. Strain apples, toss and mix with dry ingredients.
- Cut butter into dry mix until butter pieces are pea sized. Add bacon fat, eggs and milk. Mix until dry ingredients are just wet. Do not over mix.
- Fill pan evenly with mix, top with bacon bits and 2 tbsp sugar.
- Bake 40 - 45 minutes until cake tester comes out clean. If top browns too much then cover with foil to keep from burning.
- Cool in pan for 10 minutes. Remove from pan and let it cool completely before slicing and serving.
